If you follow this blog regularly you know I go back and forth between raw food and cooked food (always vegan). I've even started incorporating the 801010 concept into my diet. Yup, I can't seem to make up my mind. Really I tend to follow what my body is telling me. Some weeks I feel like I need to sort of reboot with raw foods. Now that the weather is getting so beautiful here in California I'm leaning more towards the fruitarian or 801010 lifestyle.
Whichever way you tend to eat I guarantee these Raw Tacos are tasty at any level! My kids thought they were so cool and they even helped me make the "meat" which was so quick.
1 C. raw walnuts
1 Tb. nama shoyu (or use tamari or soy sauce)
1 tsp. ground cumin
1/4 tsp. smoked paprika
1/4 tsp. sea salt
1 tsp. extra-virgin olive oil
Raw "Sour Cream"
1/2 C. raw cashews, soaked and drained (soak for at least 6 hours)
juice of 1 medium lemon
4-5 Tb. water (added gradually)
1. To Make the Taco "Meat": Place walnuts, nama shoyu (or tamari/soy sauce), cumin, paprika and salt in a food processor. Pulse several times, then add in the olive oil and pulse again 4-5 times only. Over pulsing will give you a creamier texture which we don't want.
2. To Make the "Sour Cream": Place prepared cashews, lemon juice and 2 Tb. of water into a high-powered blender, blending until smooth. Add 1 Tb. at a time of the remaining water until a creamy consistency is reached.
