Mangoes are one of my favorite fruits ever! Depending on which kind you have available to you at your local grocers or farmer's market, the flavors and texture vary greatly. I love the manila mangoes (also known as Ataulfo) best but any kind works great for this quick and fresh salad recipe. If you haven't tried incorporating dates (rich in vitamins and minerals) in your salads yet now is the time! They add just the right amount of sweetness and chewiness that offset the tanginess of the other ingredients.
This Fresh Mango Salad is vegan, raw, gluten-free and 80/10/10 approved.
Fresh Mango Salad
makes 2 servings (~1 cup each)
Ingredients:
2 C. mangos, cubed
3/4 C. heirloom tomatoes, diced
1 Tb. red onion, diced
juice of 1 lime
1 sprig fresh mint, roughly chopped
2 dates, pitted & chopped
serve atop a bed of fresh greens (optional)
Directions:
1. Combine mangoes, tomatoes and onion in a bowl. Drizzle with lime juice and toss.
2. Mix in mint and dates, tossing until combined. Serve on top of fresh greens (optional) or eat as is.
TIP: The longer this salad sits, the better! Let it marinate for 1-2 hours in the 'fridge for best results.
