Two Bean Casserole
makes 6-8 servings
1 C. chopped onion, yellow or white
2 medium stalks celery, diced
1 bell pepper, any color, diced
1-2 Tb. water
1 1/2 tsp. minced garlic
2 tsp. chili powder
2 Tb. diced green chills (or use 1 small can)
2 (15oz.) cans beans, your choice of white, pinto, black, kidney, rinsed & drained
1 (14oz.) can diced tomatoes
vegan shredded cheddar cheese
chopped fresh cilantro
chopped fresh spinach
2. Place chopped onion & celery in a 3 quart casserole dish. Add 1-2 Tb. water. Cover and microwave until tender (about 5 minutes).
3. Add remaining ingredients (minced garlic, chili powder, green chills, beans, tomatoes) and mix well.
To Serve: place into a tortilla, sprinkle with vegan cheese and toppings, roll up. Or serve like chili with crackers or cornbread.
