Two Bean Casserole: An Easy 30 Minute Meal




This is by far one of the easiest meals you can make!  If you're looking for a nutrient-dense, meatless meal this is for you. It also makes your kitchen smell so cozy yummy while it's cooking.  I like that you can just throw everything into a casserole dish and leave it alone to cook for half an hour while you do something else.  Now that's my kinda meal!



Two Bean Casserole
makes 6-8 servings

1 C. chopped onion, yellow or white
2 medium stalks celery, diced
1 bell pepper, any color, diced
1-2 Tb. water
1 1/2 tsp. minced garlic
2 tsp. chili powder
2 Tb. diced green chills (or use 1 small can)
2 (15oz.) cans beans, your choice of white, pinto, black, kidney, rinsed & drained
1 (14oz.) can diced tomatoes

optional toppings:
vegan shredded cheddar cheese
chopped fresh cilantro
chopped fresh spinach

flour tortillas

Directions:

1.  Preheat oven to 350F.

2.  Place chopped onion & celery in a 3 quart casserole dish.  Add 1-2 Tb. water.  Cover and microwave until tender (about 5 minutes).

3.  Add remaining ingredients (minced garlic, chili powder, green chills, beans, tomatoes) and mix well.

4.  Bake uncovered for 30 minutes.

To Serve: place into a tortilla, sprinkle with vegan cheese and toppings, roll up.  Or serve like chili with crackers or cornbread.
