For those of you who've been following Veggie Kids long enough you already know I go in waves of raw food-ness (check out these raw vegan recipes). Well, another wave hit January 1st as I joined my dad on another raw food adventure, at least for the month of January. One thing I've learned from going raw in the past is to be prepared. I know myself well enough to know what my weak points are so I have make sure to keep raw bread, kale chips and something sweet and chocolatey on hand.
These are super decadent so just a little piece is all you'll need.
Raw Brownie 1 X 2's
makes 8
Ingredients:
1 C. raw cacao powder
1 C. finely shredded coconut, unsweetened & raw
2 tsp. pure vanilla extract
2 Tb. coconut oil
4 Tb. raw agave nectar
optional: raw walnuts, roughly chopped
Directions:
1. In a food processor, blend together the cacao powder, shredded coconut, vanilla, coconut oil and agave until smooth. Use a spatula to scrape down the sides as you go.
2. Use your hands to form 1" x 2" brownie bites (hence, the name). You could also make 1" x 1" bites if you prefer.
3. Optional, dip the tops of the brownie into chopped walnuts, pressing firmly. Store in an air-tight container in the 'fridge. Remove 30-40 minutes prior to enjoying for ideal consistency.
