I'm definitely a carb loving kind of girl (think pasta, bread and mashed potatoes). They trigger something in me where I just want more and more! Luckily I'm wise enough to know to stay far enough away from them and eat more nutrient dense foods (I'm also a major veggie lover). The other night I was making the ever so tempting mashed potatoes for my family and knowing I couldn't have just one helping and stop there I decided to make a mommy's-waistline-friendly version for myself. Mashed Cauliflower Un-Potatoes. Of course, if you have a baby in the house, this one's for them too! 
Mashed Cauliflower (Un-Potatoes)
makes ~4 servings
1 head of cauliflower, steamed
2 Tb. Earth Balance butter
1/2-3/4 tsp. sea salt
ground black pepper (optional)
Directions:
1. In a food processor, blend steamed cauliflower and salt (more or less to taste). You'll most likely need to do this in batches depending on the size of your food processor.
2. Transfer the mashed cauliflower to a large bowl. Stir in Earth Balance butter until melted. Add fresh ground pepper if ya like! Serve warm.
