Vegan Dinners For One Week: What I Fed My Kids Last Week

Since a lot of you are always asking what the heck I feed my vegan kids, here it is!  I recorded a diary of sorts of what we ate over one week (Monday-Saturday...I counted Sunday as my day of rest).  Some days I have more time to cook than others and I love using up leftovers whenever possible.  Since my husband is not vegan, I fix him a variation on what I'm making for the rest of us (i.e., add grilled chicken to the fajitas for him, turn the burger into a turkey burger, etc.).  I am thrilled to say that he's agreed to go vegan every other day now!  Woohoo!!  

MONDAY: Veggie Fajitas, Kid-Friendly Coleslaw, Green Beans

TUESDAY: "Cheese" Quesadillas, Olives, Colorful Pasta Salad, leftover Green Beans

WEDNESDAY: Great Grain Burger, French Fries, Steamed Broccoli

THURSDAY: Lasagna, Green Beans, Garlic Bread

FRIDAY: Brown Rice, Steamed Corn, Orange Segments, Fruit Salad, Peanut Butter Cup Smoothie

SATURDAY: Teriyaki Noodles, Edamame, Yellow Bell Pepper Slices
