This is one of those super easy and very versatile dishes. Add in whatever veggies you like! Try mushrooms, spinach or roasted bell peppers. You could also add meat substitutes for a heartier meal. Dinner couldn't be any easier!
Orzo With Veggies
makes ~4 servings
1/4 C. Earth Balance butter
1 C. uncooked orzo pasta
2 C. vegetable broth
2 Tb. fresh flat leaf Italian parsley, roughly chopped (or substitute any herb you like here)
1 C. steamed broccoli, cut into bite-sized pieces
1/2 C. cherry tomatoes, halved
sea salt & ground black pepper to taste
1. In a large saute pan, melt butter over medium heat. Stir in the uncooked orzo and sauté until it's golden brown.
2. Stir in vegetable stock and bring to a boil. Cover and reduce heat to low, simmering until the liquid is completely absorbed (about 15-20 minutes).
3. Turn off heat and stir in parsley, broccoli, tomatoes and salt and pepper. Serve warm.
