HAPPY EASTER FROM VEGGIE KIDS!
Last Easter I posted about chocolate here and again about the issues surrounding chocolate, especially holiday chocolates, here. This Easter I'm offering up a couple of fun (and healthy) tried and true VK recipes to try!
My family just returned from a little vacation to Santa Barbara so I didn't have a whole lot of time to prepare the boys' baskets this year but I was able to make a quick run to Trader Joe's before we left on our trip so I could quickly assemble things Saturday night. While my boys definitely don't need any more candy or sugary treats in their life, I can't resist a few fun treats here and there.
I found four fun items, one of which has egg whites in it (salt water taffy). The rest are vegan and what I love the most about these is they contain no food coloring! If Trader Joe's can find a way to make candy like jelly beans and gum drops using vegetable extracts like turmeric, paprika and red cabbage, why can't all food makers follow suit?

As for my family, we'll be having the Eggnog Coffee Cake from above using soy coffee creamer in place of eggnog. For dinner I'll be making either this or this, two of my favorites that are easy to make both vegan and non-vegan to please everyone.
And here are some shots from our Santa Barbara trip. My husband and I moved to the San Francisco Bay Area about 10 years ago from the midwest and have loved every bit of California ever since! We both feel so blessed to have wonderful weather year-round and such beautiful scenery everywhere we go. There are so many cool places to explore!
