Meet Super Hero Bear
Talk about a fun after school snack! A friend of mine gave me a little bear shaped rice molding tool she found at a Japanese store. What a cute way to sneak some veggies in! Get creative with the decorating using whatever you have on hand. Let the kids participate too and they're sure to gobble them down.
Rice & Veggie Snack
Rice mold shaper like this one
Cooked brown rice (or use nigiri rice)
sea salt to taste
Earth Balance butter (I flavored my rice as it cooked with butter and salt)
chow mein noodles
carrots, zucchini, peppers, green onions, etc.
Cook the rice according to package directions and make as much as you think you'll need for as many shapes as you'd like (how's that for vague directions!).
I seasoned my rice as it cooked using salt and Earth Balance butter so that it had some flavor to it when I molded it into the bear shape.
Place about 1 Tablespoon of rice into the shape and press down firmly with the other piece, then pop it out.
The shape will be a bit fragile so be careful during handling.
Now comes the fun part! Decorate to your heart's desire using a variety of colorful vegetables, fruits, nuts, seeds or whatever you like. Grab the kids and have them help.
