Easy Raw Nut Pate

This is one of the recipes that you can take to a party, serve to guests at a dinner as an appetizer or just enjoy on a cracker or with some raw veggie sticks.  It comes together quickly, aside from soaking the almonds.  It's also easily adaptable as you could substitute cashews or walnuts for the almonds and throw in many flavors that you love!  It's also a great way to sneak in a ton of healthy ingredients.

Easy Raw Nut Pate
makes about 1 1/2 cups

1 C. raw almonds, soaked overnight or for at least 6 hours, drained
1-2 Tb. water (more or less for the right texture)
1 tsp. sea salt
1 tsp. grated fresh ginger
juice of 1 lemon
1/2 C. green onions, finely chopped (or use scallions)
1/2 C. celery, finely chopped
1/3 C. parsley, finely chopped
2 tsp. nutritional yeast
1 tsp. garlic powder
1/4 tsp. ground black pepper

To make the sandwich, you'll also need: 
whole wheat pita bread
fresh organic greens
cucumbers
kalamata olives

Process soaked and drained nuts in food processor with a little water, scraping down the sides as you go.  Process until smooth adding a little more water as needed, then add remaining ingredients.  You could easily add in bell peppers, shredded carrots or herbs to make this recipe your own.

This nut pate comes together really quickly and spreads easily on crackers too!



Kids love pita bread!  

You can have fun slicing them in half or into bite-sized triangles and let kids fill them up with what they want.  When I made this recipe, I put a dollop of the nut pate on a plate, along with greens, olives, Kid-Friendly Coleslaw, black beans and sauerkraut (yes, kind of a funky mix).  I was super surprised at how much they loved filling their pita pockets with healthy stuff-some of which they had never tried before. I've been on an immune-boosting, good bacteria building kick lately so along with my water kefir, we've been consuming lots o' sauerkraut too.  Gotta love the fermentation process!


Make smaller sized pita sandwiches for little fingers to pick up easily.

My kids and I had fun pretending this was an alligator mouth chomping at them.
